Brown Rice Pilaf (IP)

Ingredients:
  • 2 Tbs. butter
  • 4oz. Sliced cremini or mixed mushrooms
  • 1-1/4 C chicken stock
  • 1 C short-grain brown rice
  • 1/2 tsp. salt
  • 2 Tbs. chopped parsley
Instructions:

Set Instant Pot to sauté on high.

Add butter and mushrooms; cook 6 to 8 minutes. Season with kosher salt and pepper. Add chicken stock, rice and 1/2 teaspoon salt. Put on and lock lid. Set to pressure-cook on high for 25 minutes. Let pressure release naturally. Stir in parsley and serve.
