Mexican Pinto Beans (IP)

Ingredients:
  • 2 C dried pinto beans
  • 3 C chicken stock
  • 1 onion, quartered
  • 1 jalapeno, stemmed, seeded and quartered
  • 1/2 C salsa verde
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. salt
Instructions:

Add all ingredients to the Instant Pot and stir.

Close and secure lid. Select the PRESSURE COOK setting and set the cooking time for 27 minutes at HIGH pressure.

Once cooking is complete, allow a 10 minute natural release. Uncover the pot and remove any big pieces of onion and jalapeno; Serve.
