Prepare and roll out the crust
Set the oven to 500 and allow to come to temp.
While waiting for the oven to heat up, whisk the olive oil, honey and rosemary together
Prebake the crust just until it sets, note that this won't take long if you use a thin crust, with the standard recipe crust and a 14 inch crust it takes about 4 minutes to set
Pull out the crust and spoon on the olive oil/honey mixture. Reserve some of this mixture for a drizzle after the pizza comes out of the oven.
Place the sliced onion over the olive oil/honey mixture and top with a light layer of mozzerella.
Sprinkle the gorgonzola on top of the mozzerella and then arrange the pear slices on top of that.
Bake until the crust and top are browned (about 12-14 more minutes with the crust recipe supplied)
Remove from the oven and drizzle with the remaining olive oil/honey being careful to avoid drizzling the chopperd herbs remaining.
