Roasted Broccoli

Ingredients:
  • 8 C broccoli fleurettes
  • 2 Tbs. olive oil
  • 1/4 tsp. Salt
Instructions:

Put oven rack in middle position and preheat oven to 425.

Toss broccoli with oil and salt in a large bowl. Spread in 1 layer in a large shallow baking pan (1 inch deep) and roast, stirring and turning over occasionally, until tender and golden brown, 20 to 25 minutes.

For roasted broccoli and cauliflower at the same time, heat oven to 425. Roast cauliflower only for 10 minutes. Stir; add prepared broccoli and roast for an additional 10 minutes. Stir again and roast for 10-15 additional minutes.
If roasting broccolini too, add to pan for the last 15 minutes of cooking.
