Cilantro-Lime Rice

Ingredients:
  • 1 C long-grain brown rice
  • 1/2 C fresh cilantro
  • 2 Tbs. fresh lime juice
  • 2 Tbs. water
  • 1 Tbs. olive oil
  • 1 garlic clove
  • Salt
Instructions:

Cook brown rice according to package directions.

Meanwhile, in a blender, combine cilantro, lime juice, water, oil, garlic; blend until smooth. Add salt to taste. Stir into cooked rice, and fluff with a fork.
