Cabbage and Corn Slaw

Ingredients:
  • 1/3 C frozen orange juice concentrate, thawed
  • 1/3 C seasoned rice vinegar
  • 1/3 C canola oil
  • 1 (16oz.) bag coleslaw mix
  • 4 ears fresh corn, shucked, or 1 (10oz.) package frozen corn kernels, thawed
  • 2 medium carrots, peeled and chopped
  • 1 medium red bell pepper, cut into thin strips
  • 6 green onions, thinly sliced
  • 1/2 C chopped, fresh cilantro
Instructions:

Whisk together the orange juice concentrate, rice vinegar and oil in a small bowl. Combine remaining ingredients in a large bowl and toss the dressing. Season to taste with salt and pepper.
