Black Beans and Rice

Ingredients:
  • 1 Tbs. olive oil
  • 1 medium onion, finely diced
  • 1/2 red bell pepper, finely diced
  • 4 cloves garlic, minced
  • 2 cans (15oz.) black beans, rinsed and drained
  • 1-1/3 cup water
  • 3 Tbs. cider vinegar
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. fresh ground black pepper
  • 1 tsp. oregano
  • 1 tsp. cumin
  • 1/2 tsp. chipotle chile powder
  • 1 tsp. ancho chile powder
Instructions:

Heat oil in a large non-stick pan over medium-high heat; add onion, red pepper and garlic. Sauté for 5-7 minutes until everything is tender. Add all remaining ingredients; bring to a boil. Simmer for 10 minutes, or until sauce has thickened. Serve over brown rice.
