Three Bean and Pork Chili (CP)

Ingredients:
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 C carrots, chopped
  • 1 Tbs. chili powder
  • 1 tsp. oregano
  • 1 canned chipotle pepper in adobo sauce, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 lb. lean pork tenderloin, cut into 1-inch chunks
  • 15oz. canned black beans, drained and rinsed
  • 15oz. canned kidney beans, drained and rinsed
  • 15oz. canned pinto beans, drained and rinsed
  • 1 C canned tomato puree
  • 20oz. canned diced tomatoes, undrained
  • 6oz. tomato paste
Instructions:

Combine onion, garlic, carrots, chili powder, oregano, chipotle pepper, salt and pepper in a 5-quart (or larger) slow cooker; stir. Add remaining ingredients; stir again.

Cover and cook on High for 6 to 8 hours. Yields about 1 cup per serving.
