Beef and Bulgur Casserole

Ingredients:
  • 1 lb. 93% lean ground beef or turkey
  • 1 large onion, chopped
  • 1 can diced tomatoes, drained
  • 1 clove garlic, minced
  • 1 C bulgur, uncooked
  • 1 C water
  • 1 C beef broth
  • 1-1/2 Tbs. dried parsley
  • 1 tsp. salt
  • 1/2 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 1/2 grated Parmesan cheese (optional)
Instructions:

Preheat oven to 350.

Brown ground beef and onion in a large skillet over medium-high heat until beef is browned; drain. Stir in remaining ingredients except for the cheese. Pour into an ungreased 2-quart casserole. Cover and bake for 45 minutes or until bulgur is tender. Stir in cheese if desired.
