Chicken Taco Soup (CP)

Ingredients:
  • 1 lb. frozen chicken breasts
  • 1/4 C taco seasoning
  • 1/4 C minced, dehydrated onion
  • 1 can diced tomatoes
  • 1 can (4oz.) diced green chiles
  • 1 can black beans, rinsed and drained
  • 1 can cannellini beans (or any white beans), rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 1-1/2 C frozen corn
  • 2-1/2 C chicken stock
Instructions:

Put everything in the crock-pot in the order listed. Do not stir. Cook on low for 6-8 hours. Take chicken out and shred with two forks. Put chicken back in, stir and eat. Serves 12. Serving is about 1 cup.
