Spicy Peanut Noodles with Shrimp

Ingredients:
  • PEANUT SAUCE:
  • 1/3 C creamy peanut butter
  • 1/3 C water
  • 2 Tbs. low-sodium soy sauce
  • 1-1/2 Tbs. rice vinegar
  • 1 to 2 tsp. chili paste with garlic
  • 1/2 tsp. sugar
  • 1/2 tsp. salt, divided

  • PASTA:
  • 1 lb. medium, cooked, shrimp
  • 4 C cooked thick udon noodles or linguine (8 oz. uncooked)
  • 1 red bell pepper, cut into julienne strips
  • 3/4 C chopped, seeded cucumber
  • 1/4 C diagonally cut green onions
  • 3 Tbs. chopped roasted peanuts
  • 2 Tbs. cilantro leaves
  • 4 lime wedges (optional)
Instructions:

To prepare sauce, combine the first 6 ingredients and 1/4 teaspoon salt; stir with a whisk.

To prepare pasta, combine peanut sauce, shrimp, noodles, bell pepper, cucumber, and onions in a large bowl; toss well. Sprinkle with chopped peanuts and cilantro. Serve with lime wedges, if desired.
