Sausage and Pepper Sandwiche Filling

Ingredients:
  • 2 red bell peppers, thinly sliced
  • 1 medium onion, thinly sliced
  • 4 large garlic cloves, chopped
  • 1//2 tsp. dried or oregano
  • 1/2 tsp. dried basil
  • 1/4 tsp. dried crushed red pepper
  • 1 Tbs. olive oil
  • 12oz. lowfat smoked sausage, sliced
  • Salt and pepper to taste
Instructions:

Preheat oven to 350. Combine first 6 ingredients in 11x7x2-inch glass baking dish. Pour oil over and stir to coat. Season with salt and pepper. Arrange sliced sausages on pepper mixture.

Bake until sausages are cooked through and peppers are tender, stirring occasionally, about 35 minutes. Do not cover.
