Creamy Tomato Dressing

Ingredients:
  • 1/4 C drained canned diced tomatoes
  • 1/4 C chopped fresh parsley
  • 1/4 C cider (or red wine) vinegar
  • 1/4 C mayonnaise
  • 1 Tbs. chopped fresh basil
  • 1 Tbs. Dijon mustard
  • 1 garlic clove, minced
  • 1 tsp. sugar
  • 1/2 C olive oil

Instructions:

Puree all ingredients except oil in processor With processor running, add oil; blend until smooth. Season with salt and pepper. Transfer to small container and refrigerate.
